In our collective journey and effort to achieve an eco-friendly and sustainable environment, waste management will always remain relevant. It is constantly not enough that restaurants acquire the land's goods as fresh as possible and engage only natural food processing techniques; sustainability is not realizable if waste is not managed to the barest minimum. The gastronomy system is designed to produce kilos and kilos of garbage sent to incinerators, landfills or even the ocean, doing the reverse may seem impossible, but is far from that.
Around the world, the gastronomic sector gradually is working with the realization that a zero-waste system where trash is possible for the good of our environment and extensively, us as humans. As an eco-conscious gourmet (which everyone should be), below are restaurants which through constant effort driven by a strong will, persistence and creativity have to succeed in establishing a zero-waste system.
Silo - €€€
Born with the dream of running a bin-less restaurant and the desire to innovate the food industry through creative contributions, Silo has successfully pursued and achieved this dream whilst sustainably satisfying their niche and community.
Situated at Hackney Wick, London, Silo successfully eliminates by trading directly with farmers, choosing local ingredients that rarely generate waste and using only reusable delivery vessels.
Their compost machine further turns any of the restaurant scraps into compost used to produce more food, thereby closing the loop.

Tèrra Restaurant - €€
Located in Copahengen, Denmark, this zero food waste restaurant has minimalism and sustainability as its signature. Tèrra makes only seasonal tasting vegetarian dishes which are based on the Italian culinary tradition.
Each menu is balanced with the seasonal animal protein (biodynamic or freshly caught). All leftovers are sustainably converted to byproducts until only fibres are left to become compost which returns to their garden, where aromatic herbs and seasonal plants are grown.

This Belgium restaurant, located in its capital, Brussels is also a 'from the field to the plate and from the plate to the field restaurant'. At Le Local, the cooking is done with respect and honesty, following the philosophy of zero waste to limit food waste. They cook creatively, what some would tend to throw away.

This community based sustainable restaurant is famous for cooking delicious, plant-based dishes using seasonal ingredients. In aspiration to be zero waste, single-use plastics are not tolerated, and all takeaway containers and coffee cups are fully compostable; just as their food waste joins the compost rather than being sent to landfill.

Cool name right? Beyond that, Kitchen Dates located in Lisbon, the capital of Portugal is another zero-waste, sustainable restaurant. Exclusively, they only use ingredients of the best quality, which comes directly from the producers (proximity friendly), in reusable containers, of course. In return, they give back to the earth (specifically where their produce comes from) which long term, produces more healthy ingredients. A win-win situation indeed.
