3. Bæst, København, Denmark -

This restaurant in the hip and colourful Nørrebro area of Copenhagen is Italian-inspired. They make use of a combination of Italian produce and local organic produce sourced from Danish farmers.

6. La Banchina, København, Denmark -

Depending on what time of the year you choose to visit, the Italian-styled restaurant at La Banchina offers different menus which are based on seasonality. 7. Amass Restaurant, København, Denmark -

This restaurant operates with an interesting mindset – "Responsible deliciousness". They are always thinking of how to make the most delicious food possible while also being responsible and conscious about the environment.

They do not allow food wastage; they make use of all parts of the ingredients including those considered as waste like vegetable stems and fruit skins.

What can't be used in cooking is used as compost in their gardens and what can't be used as compost is converted into biofuel.

The majority of their food is organic and is sourced from local farmers and vendors. The fish are caught close to the coast and farmed fish are not used.

So, as the name implies, the restaurant makes use of local, Nordic ingredients and seasonal vegetables to produce simple dishes that are not only tasty but also artistic.

They aren't just known for their cuisine, the internal design has fetched them awards such as Worlds’ Best Designed Restaurant at Restaurant & Bar Design Awards and World’s Most Beautiful Restaurant in American travel magazine Travel + Leisure. The restaurant strives to be as sustainable as possible and makes use of solar cells to provide energy. They also actively recycle and also avoid food wastage.

Madklubben has quite a few restaurants across Denmark, 15 of which are in Copenhagen. Madklubben is a big family of dining solutions and has a diverse set of restaurants. Food Club is one of such restaurants. They provide delicious, organic food in a quiet environment that everyone can enjoy. They make use of a lot of vegetables in their dishes. 
These vegetables are selected from the local seasonal produce. The restaurant is also against food wastage and donates leftovers to the Salvation Army's local hostel in Copenhagen. The restaurant is also child-friendly. Kids under 6 eat for free, while kids 6-12 eat for just 100 DKK.

11. Noma, København K, Denmark -

Noma was one of the frontrunners of the new Nordic wave that hit the shores of Denmark which revived the use of authentic local ingredients and cooking methods. Several chefs that worked with Noma have created their restaurants based on the principles spearheaded by Noma.

Noma divides their menu into three sections, displaying three seasons and their best ingredients. From January to the beginning of the summer, the menu is based on Scandinavian shellfish. From then and until autumn it will be vegetables in focus and a little bit of the shellfish, followed by a menu of game and forest elements.

There are lots of preserved greens and flowers that they have foraged over the summer, with mushrooms, berries, and everything the forest has to offer lasting until the next coming January.
