So they trade directly with farmers, using reusable delivery vessels, and choose local ingredients that barely generate waste. Even if there are any scraps or trimmings, it is directly converted into compost to produce more food.

Aside from closing the waste loop, this restaurant is also about pure foods born from clean farming and a sustainable space even by its furniture and fittings. Find SILO in Hackney Wick, creating everything on site from its whole form (without unnecessary processing), preserving nutrients, capturing real food which tastes better, and serving natural brewed drinks.
