Striving for the pre-industrial food system, SILO chooses to provide quality through purity, adopting a more primitive diet with modern and ancient techniques. SILO, as a restaurant conceived from a desire to innovate the food industry while demonstrating respect for the environment, is designed from back to front to be zero waste. So they trade directly with farmers, using reusable delivery vessels, and choose local ingredients that barely generate waste. Even if there are any scraps or trimmings, it is directly converted into compost to produce more food.
Aside from closing the waste loop, this restaurant is also about pure foods born from clean farming and a sustainable space even by its furniture and fittings.
